This came out great. I’ve not used carmelized onions in gravy before, and it added a lot of flavor.
I did substitute beyond that though. I used rendered turkey schmaltz instead of butter in the roux, made stock w neck and giblets to add to the turkey drippings. I then put the carcass into the instant pot to make even more turkey stock.
